Baigorri Blanco Fermentado en Barrica
DESCRIPTION
Un vino blanco diferente gracias a su fermentación en barricas de roble francés con un tostado específico, dándole equilibrio entre fruta y madera, complejidad y estructura. Su paso en boca es untuoso, cremoso y de gran riqueza aromática. La crianza sobre lías le otorga personalidad y elegancia relevantes.
White wine kissed by oak is not for everyone, we know that. However, it depends on the intensity of the oak kiss, on the handling of the barrels and its toasting. For our white wine the oak is not used to flavor but to give structure and creaminess. We put the focus definitely on the fruit and the spiciness of the wine, its complexity and length on the palate.
White wine made from the varieties Viura (90%) and Malvasía (10%), sourced exclusively from old vineyards, located in the villages of Samaniego, Navarides and Leza, Rioja Alavesa.
After a manual picking, all the grapes are hand-selected using vibration and selection tables. The must macerates with the grape skins some hours before its pressing. The fermentation and ageing (8 month) of the wine, in contact with its fine lees and regular bâtonnage, take place in new French oak barrels with especially light or without toasting.

FOOD PAIRING: Wine specially indicated for any type of fish. Light poultry meats such as chicken, turkey or partridges. Appetizers based on cheeses, Iberian tables and nuts.
VINIFICATION
After a manual and selective harvest, the stemmed grape has been selected by hand, grain by grain, using selection tables by vibration and weight. The must macerates a few hours with its skins to subsequently pass to a pneumatic press. The fermentation and 8 months of aging are carried out in contact with the lees in new French oak barrels with a specifically light toast or without toasting.
VINEYARDS
Several plots located in La Rioja Alavesa and La Sonsierra with their characteristic clay-calcareous soils. Average age of the vines:> 60 years. Average altitude of the vineyards: approx. 550 meters. Conduction system: glass and wall glass. Sustainable viticulture with 100% manual work.
TASTING NOTE
Golden yellow color. The secondary notes of the long aging in barrels stand out on the nose; fine lees and balsamic aromas. After a while in the glass, aromas of tropical fruits and mineral touches stand out. On the palate the wine is creamy, very complex, elegant and creamy. Very long and persistent finish.
